Originating from Hokkaido, Miso Ramen is one of the few popular styles of ramen commonly available around the world, together with shoyu, soy sauce based ramen and tonkotsu, pork bone broth ramen.

 

Since ancient times, the use of miso has played a very important role in the Japanese diet alongside staples like rice and wheat.

 

A valuable source of protein, it possesses many health benefits, proving to improve gut health with its nutrient-rich properties and vitamins.

There is a saying in Japan: “Eating miso keeps the doctor away”.

Soybeans, the raw material for miso, are in itself rich in proteins, fats, vitamins, minerals, and more.

 

By fermenting soybeans with the addition of koji, digestion and absorption of these substances are improved, and the nutritional value is further enhanced.

Menya Kanae imports its Miso directly from Hokkaido, the original birth place of Miso Ramen.

Miso, which is derived from soybeans through the process of fermentation, imparts an incredible amount of nutritional value to the natural composition of miso.

It contains all eight essential amino acids that are vital for sustaining life.

 

In addition to the above ingredients, vitamins (B1, B2, B6, B12, E, K, niacin, folic acid, pantothenic acid, piotine), minerals (sodium, potassium, calcium, magnesium, phosphorus, iron, zinc, copper, iodine, selenium, chromium, molybdenum), monounsaturated fatty acids, polyunsaturated fatty acids, dietary fiber, etc. are included.

​岩田醸造は創業1892年、味噌作りの要である「水」に、支笏一帯の自然が与えてくれた質の良い地下水を使用しています。また、大豆はクリーンで上質な丸大豆を厳選して使用しており、自然の恵みを原料として、蓄積した職人の技によって作られています。

A passion project, Menya Kanae was founded by Koga Akihiko because of his deep love for authentic Hokkaido Miso Ramen.

His aim is to introduce his ideal, perfect Miso Ramen to the people in Singapore.

 

It took half a year to create Kanae's Signature Miso ramen and Ebi Prawn ramen using ingredients imported directly from Japan, such as specialty miso from Hokkaido, and one of the best dried bonito "katsuobushi" for broth base from Kagoshima.

Koga’s venture into the F&B industry started with Tamoya Udon at Liang court in February 2013.

After the success of his first restaurant, Koga brought in the famous Japanese Mazesoba brand Menya Kokoro at Suntec City.

He currently supports six famous Japanese F&B brands – Menya Kanae, Menya Kokoro, Yakiniku Gyushige, Ramen Machida Shoten, Beef Cutlet Katsugyu, famous tonkatsu brand and Tamoya Udon in various Asian countries.
